돼지의 가축화는 약 13,000년전 오늘날 서아시아에서 시작되었다 하며, 이로 부터 주요 영양공급원으로써 독보적인 위치를 지키고 있다. 먼 훗날, 프랑스와 스페인등의 유럽국가에서 주요 식재료로 사용되었으며, 스페인의 경우, 15세기후반 식민지 개발시 중남미로 도입하는 역할도 하였다.
